Cake Mix Cookies...YUM!!!

You know that one (or maybe more than one) recipe(s) that your mom was always famous for? Whenever she baked anything for you to take to school or on trips with family and friends, everyone would always hope that she made her famous recipe. Well, my mom was no exception. I'm not sure where she got the recipe from, but she is famous for her Cake Mix Cookies. Take any flavor cake mix you want, add two eggs, 1/2 cup of oil and chocolate chips and/or nuts if you want. Excluding the chocolate chips and nuts, those are basically the ingredients the cake mix would call for (located on the back of the box). Bake at 350 for about 10 minutes. Soooo yummy! I had friends at school that would request these! I even made them for my "instructional speech" for Speech Class in 8th grade! They were a hit!

Now...making them gluten-free. For the cake mix, I used Hodgson Mill Gluten Free Yellow Cake Mix. I then added the 2 eggs, 1/2 cup of canola oil and 1/2 a bag of 12 oz chocolate chips. The batter was VERY oily, a lot more than the regular batter would be. Looking at the back of the cake mix box, the ingredients were a little different, including buttermilk. I think next time I make these, to make them more creamier and not so oily, I will add buttermilk and see what happens. 

The batter didn't yield as many cookies as I had hoped it would. Normally with the same amount of chocolate chips, the chips would be used up, but not with the gluten-free recipe. I had a lot of chocolate chips left over, so that tells me that the batter didn't spread out as much as it normally would. 

When I normally bake these, having them in the oven for 10 minutes would almost burn the cookies. With the gluten-free recipe, it took about 20 minutes. All in all, the cookies turned out pretty good, but I will definitely be trying some different things next time I bake these. 


  1. Nice entry! I think it's the first time I've tried cookies (gf or otherwise) made with cake mix, and I have to say that I enjoyed them very much. One thing of note is that gf cookies normally are not that great after the first day or so; I was impressed with the texture and flavor of the cookies made using this recipe in the next couple of days after they were baked.

    I look forward to you trying those different ideas out when you make them again :)

Pie Five Pizza Co. Restaurant Review

Since we have moved back to Nashville (yay!!), we have had the opportunity to eat out more than we used to. There are a few places that we feel safe eating at, and Pie Five was just added to that list.

I have to admit, I was skeptical at first about how (or if) the employees would be trained about cross contamination. The menu does have a disclaimer about the company not being able to guarantee cross contamination, which I was a little leery of since I seem to be pretty sensitive when things are made in cross-contaminated areas. 
Well, let me tell you...this company exceeded my expectations. 
First, let me explain how Pie Five works. It's kinda set up  like Subway. You walk up, place your order, tell them what toppings you want on your personal size pizza, and they put it in the oven. You keep walking down to checkout where you get your drink and by that time, your pizza is ready! It's really a pretty cool system.

Our Gluten Free Experience In Jamaica

For our honeymoon, we traveled to Negril, Jamaica. We stayed at the Couples Resort in Negril.  For traveling, I packed an assortment of Vans Bars and some Glutino Lemon Bars. 
We arrived late Sunday afternoon at the resort and we were starving. We ate at the Heliconia Restaurant for the first time. 

I ordered grilled chicken with some kind of salsa topping with french fries. It was very good. Definitely hit the spot.

Marshal had the steak with a really great sauce (that I can't remember the name of right now) with french fries. 
After we talked to our waitress about how we don't eat bread or anything with gluten (which we're not sure if she understood or not), the chef came out and talked to us to tell us what we could have off the menu. My chicken was supposed to come with a side of creamed potatoes, but those contained flour so he made me french fries instead. 
We would eat at this restaurant a couple more times for lunch and dinner during the week.
