White Chocolate Macadamia Nut Cookies
It's been awhile since I've written. I've been sick the past week and haven't felt like doing anything, much less baking. I was finally able to bake today (thank goodness)!!
We had a cookout at my Aunt and Uncle's house tonight. I knew we would be grilling out which would be fine for Marshal to eat, but the desserts he might not be able to eat. So I decided to make him something gluten-free. He found a recipe online for White Chocolate Macadamia Nut cookies, but instead of following the recipe, we decide to use a Betty Crocker Chocolate Chip Cookie Mix instead. I took the chocolate chips out and substituted with 1 cup of white chocolate chips and 1/2 cup of macadamia nuts.
I followed the recipe on the box, adding 1 egg and 1 stick of softened butter to the flour mixture.

Finished product...I made them pretty big so they took about 15-20 minutes or so to get brown.
Everyone at the cookout loved these! My parents, aunts and uncles, cousins...even my grandfather, who I wasn't sure would like them being gluten-free, liked them. He even took some to-go! Marshal loved them too!
This was my first time trying a Betty Crocker Gluten Free mix and they got rave reviews! Can't wait to try other mixes!
