Gluten-Free French Toast


I have always loved french toast. I especially loved when Mom made it for dinner, which was a lot of times at my request. :) Living on my own, I made it a lot, sometimes tweaking the recipe.     
Marshal requested it recently, so we froze some Udi's Gluten-Free whole grain bread until today. It was also a cooking lesson for Marshal. I wanted to show him how to make it so when he goes to Med School in the fall, he can make his own. 

My mom learned this recipe in her Home Ec class in highschool!
-2 eggs
-1/2 cup of milk
-1/4 tsp salt
-4 or 5 slices of bread
(This recipe was able to make about double the slices since the bread wasn't as thick as normal bread.) 

I added about a tsp of vanilla and also dusted the bread, once on the skillet, with a mixture of sugar and cinnamon. 


Here's the final product....

Marshal loved them and I did too!! They were awesome!! 
  And here's a tip for warming up the leftovers (if you have any)....instead of putting them in the microwave, put them in a toaster. That makes them taste like they just came off the skillet, instead of soggy from a microwave!
