Giving Freezer to Crockpot Meals a Try

 I have had I'm A Celiac's blog post about her GlutenFree Freezer Meals bookmarked for forever and I finally got around to trying one out! These are such an easy and simple solution to making dinner in a busy household! Yes, it takes some time to put all the bags together (if you decide to make all at the same time) but after you make them, you could have (possibly) 10 meals ready to go!  

I decided to just try one for right now, just to see how it works and make sure that I did everything right. I'm planning on making these a lot when I'm married and Marshal and I are both in school and busy, busy, busy! So I wanted to just be able to breeze through them when that time came. 

My first meal to try was the BBQ Pork Chops. YUM! I pretty much followed the recipe that's on the link I posted above, but looking at it just now I realized that I left out the brown sugar! It still tasted great though so no worries! Anyways, I decided to double the recipe but only used 1 pepper b/c I'm not a big spicy food fan. 

4 pork chops, 2 carrots, 2 celery stalks, 2 sweet potatoes, 1 green pepper and 1/2 C of Sweet Baby Ray's BBQ Sauce: 

Put it all in a bag, shake it up and make sure the bbq sauce coats everything! Super easy!



I put all this together Friday night and stored it in the freezer, with a plan to make it for Monday night. Pam (I'm A Celiac) suggested on her blog to put the bag in the fridge the night before you want to make it. At about 12:30 last night (Sunday), I was laying in bed and realized I forgot to put it in the fridge. So I got out my flashlight and made the switch! Whew! Crisis averted! 

I put the meal in the crockpot around 2 today and took it out around 6:30. I was worried that since I doubled the recipe, I would need to have it in the crockpot longer than the recommended 4 hours, but the pork chops were cooked thoroughly! Ready to eat! 

 

Soooo good! And a big hit with my parents! 
Wish Marshal could have been here to taste it!
