Gluten Free Sausage and Pepperoni Pizza Casserole


I'm so excited about my new blog "look"! I hope you all like it as much as I do! :)

I can think of no better way to welcome the new change than with an awesome recipe. This casserole is so quick and easy it's sure to be a hit! 
This is another of Marshal's Great Aunt Jean's recipes. Once again, I hope I did it justice. 


Here is what you need:
-1 lb sausage
-12 in gluten free wide noodles, cook as directed (side note coming)
-2 14 oz jars gluten free pizza sauce
-2 cups (8 oz) shredded cheddar cheese
-6 oz sliced pepperoni

Prego's Pizza Sauce is clearly labeled gluten free on the back of the jar. 


We have used this pepperoni a couple of times so far with making our own pizzas, and we love it! 


I have used De Boles pasta in the past and loved it and this time was no exception! 
Side note: The recipe calls for you to cook the pasta before putting it in the casserole dish to bake. As you can see from the picture, this pasta was ready to go in the oven, no boiling required. The outer edges of some of the pieces that were on the side of the casserole dish were still a little hard when I took it out of the oven but overall it still tasted great. 
Does anyone know if I were to boil the pasta and then use it the dish, would it have still tasted ok? I'm just curious for next time. 

And one more thing about the pasta: We bought two boxes of this at Whole Foods and I thought I would need to use both for this recipe but one box filled up the whole dish. 

Here's the recipe:
1. Preheat oven to 350 degrees.
2. Crumble sausage in medium skillet, cook until brown; remove and drain on towel.
3. In sprayed casserole dish, layer 1/2 noodles, 1/2 sausage, 1/2 sauce, 1/2 cheese, 1/2 pepperoni.
4. Repeat 2nd layer, leaving more pepperoni slices for the top. 


Bake 35-40 minutes. 


I made this a couple of days ago and Marshal is STILL talking about it! He mentioned to me just a few hours ago about how much he loved it! I think I'm spoiling him a little bit but oh well, that's my job right?!  ;)

  2. I just made this, using the DeBoles lasagna noodles. 40 mins wasn't long enough to cook the noodles all the way, so it's back in the oven. I'm guessing an hour is a more appropriate cooking time when using the no-boil pasta. I hope it turns out...

    1. As I mentioned in the post, when I made this the edges of the noodles were a little crunchy. This recipe was originally a non gluten free recipe so there will probably be some difference with regular noodles and gluten free noodles as far as the cooking time. I hope it turns out for you. Your oven might be off with temps as well depending on how old it is. The one that I made this casserole in at the time was probably off a little bit too.

  4. I use Tinkyada lasagna noodles. They hold their shape much better after boiling. Just cook them halfway and proceed with the recipe. I can't wait to try this..just found it on Pinterest! I think my family will love it! Thanks!
