If you're like me and either can't find corn tortillas in your grocery store or you just don't really like the taste of corn tortillas (guilty), then it can be frustrating when that craving for Mexican food hits. I used to make cheese quesadillas all the time for a quick snack or lunch (or dinner). But now, it's not so simple.
Enter Chebe. I was trying to figure out what to do with this Cheese Bread Mix. Chebe has several recipes on their website for all of their mixes. I found one for tortillas and thought I should give it a try.

It's a very simple and quick recipe.
I used milk with the mix but I might use water the next time I make these.
Yes, these aren't a perfect shape, but I don't have a tortilla press so that's the best I could do. They all taste the same either way right? ;)
After I made these, I put some shredded mozzarella cheese on it, put it in the microwave for a couple seconds and then rolled it up. Pretty easy. You could also make quesadillas in a skillet with these. Super easy.
There are so many ways to use them.
And, I had several left over and they stayed fresh in the fridge for several days.
