Sweetheart Cheesecake Bites from Sugar n' Spicegals


I was looking for something different and unique to make Marshal for Valentines Day when I just happened to come across this recipe! 
It wasn't gluten free but it was easily convertible!

Here is what you need:
-12 Glutino Sandwich Cookies (Oreo Cookies)
-16 ounces of cream cheese
-2 eggs
-1/2 cup of sugar
-1/2 tsp vanilla extract
-raspberry jam
-whip cream
-raspberries

Place cookies in prepared muffin tin (with paper cups)


These are awesome cookies!!!!!

To make the cheesecake mixture, beat cream cheese, sugar and vanilla together until well blended. 
I think the cream cheese was supposed to be softened b/c these ingredients did not mix well together at all. I had to mix it by hand, which made the mixture lumpy. I tried mixing it for a long time, but couldn't get rid of the lumps. 

Add eggs to the mixture until well blended. 

Top each cookie with the cream cheese mixture. 

Bake at 350 degrees for 20 minutes until middle is set. 


Let cool for several minutes after taking out of oven, then cool them in the fridge for 3 hours. 

Top each cupcake with 1 tbsp of raspberry jam.
Then top with whip cream and finish off with a raspberry! 


Let me just say, Marshal was not disappointed! ;) He loved them! 
These are great for birthdays, anniversaries, showers, or just because!

  1. Those look absolutely deadly! YUM! I've made something similar before, but without jam, whipped cream and raspberry. (I think I like your version way better haha!)
