Spaghetti Squash Tutorial: An Alternative to Gluten Free Spaghetti Noodles

Have you ever tried spaghetti squash? There are so many different ways to cook and eat it; the possibilities are endless! 
We planted it for the first time this year and it literally took over our garden! The two plants produced so much that we're having to get creative with how to use it. I've started a Pinterest board for different recipes here




I thought that spaghetti squash was normally yellow, but as you can see, it can also be white and green! Who knew?! 

Spaghetti squash skin is very tough and is difficult to cut.  I have figured out a pretty easy way to cook it. 

Here's how:

1. Poke holes in the squash with a fork 
2. Place the squash on a plate and microwave for about 5 minutes or until soft; meanwhile, go ahead and preheat the oven at 350
3. After the squash cools, cut in half lengthwise with a knife 


4. Scoop out the seeds with a large spoon (This step could be done after cooking, but it will be pretty messy)




5. Brush olive oil on the inside of the squash 



6. Place both pieces cut side down on a baking tray 



7. Bake at 350 for about 45 minutes 




8. Once the squash have cooled off, scrape out the inside with a fork 



You will be surprised how much "spaghetti" you can get out of one squash! It makes a lot! 




Serve with your favorite spaghetti sauce and beef or sausage and you're good to go!  I'm anxious to hear how you like it!
