One Pan Dinner: Sweet Potato, Apple and Sausage

Fall is finally in the air! I hope you are enjoying all that this wonderful time of year can bring!

We have been buying a lot of sweet potatoes and apples lately, so I came up with a recipe that I think you will like. It's so simple but so delicious! 


The tastes and colors coming from this recipe are awesome and you can change it up every time you make it. It's very versatile.


Honeycrisp apples are my favorite, but Gala would be nice as well.


I used Turkey Sausage this time, but I have also used different types of Chicken Sausage in the past as well.


Pretty colors galore! 

For the recipe, you will need:
-1 or 2 sweet potatoes (I used 1 big sweet potato, so if yours are smaller, I would use 2)
-2 medium sized apples
-1 packaged fully cooked sausage (any variety you like)
-2 T Dijon Mustard or Honey Mustard
-1/3 cup maple syrup 
-1 T honey

1. Preheat to 425 degrees. 
2. Cut up sweet potatoes into 1-2 inch pieces. Mix on a sheet pan with olive oil and salt and pepper and bake for 20 minutes.
3. Meanwhile, cut up apples and sausage. 
4. Mix mustard, syrup and honey together. 
5. Once sweet potatoes are done, combine them with the apples and sausage on the same pan. 
6. Pour mustard sauce over everything. (You can pour the sauce over the apples and sausage in a bowl separately if you want. Either way is fine.)
7. Bake for an additional 20-25 minutes, until sausage is browned and fruit is cooked.

Serve with your favorite rice or noodles!


See? It's so easy! And you can play around with the ingredients depending on your preference.
